I got this knife as a type of impulsive indulgence, I think it looked cool in its own holder and I had heard excellent things about Shun knives. Even so, all those good points are correct. It's by far the sharpest knife I've owned, and I've got Henckel Zwillings (not the cheapo kind you get at Target) which have been sharpened to what I Utilised to feel was the sharpest blade around. I'm not dissing the Henckels - if I had not indulged in the Shun I'd happen to be very pleased with their performance. But I did get a opportunity to create some observations on how the Shun shone (no, it is not exactly the same "u" as in "Sun" but it is a borderline pun): (More...)
